Caplin Cove Cod au Gratin

1 kg cod fillets (~ 2 lbs)
3 tablespoons margarine
½ cup all purpose flour
2 cups milk
2 cups grated cheddar (medium)
½ lb breadcrumbs
salt and pepper to taste

Preheat oven to 350ºF. Place fillets in a pot covered with salty water. Poach until fillets are flaky and break apart. Drain.

Melt margarine and mix with flour and milk in a small saucepan on medium heat. Stir until thickened, season with salt and pepper.

Place fish into greased 8 x 12 baking dish and pour sauce over layers of fish. Sprinkle top with cheese and cover with breadcrumbs.

Bake in oven for 25 minutes until cheese is brown.

Serve with Boston Brown potatoes and fresh julienne carrots.

What a delight! Could be used as an appetizer or for a full meal. Popular all around the Province of Newfoundland and Labrador as well.
