Baked Cod

2 lbs cod fillets
1 cup chopped onions
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dry mustard
1 cup cheddar cheese (grated)
3 cups bread crumbs
6 tablespoons butter
1/4 cup freshly chopped parsley


Season cod fillets with salt and pepper and place in a greased caserole dish. Melt butter in a separate pan and add onions, then stir in the dry mustard.

Combine the bread crumbs and butter mixture together. Add cheese and parsley, tossing gently until well mixed.

Spread bread crumb mixture over the cod fillets. Bake at 350F for 20-25 minutes.

Serve with creamy whipped potatoes or garden vegetable medley (healthier choice).
